2:1 Simple Syrup

2:1 simple syrup last much longer than 1:1 simple syrup. I always have a jar in my refrigerator for cocktails or infusions. While it may crystalize a bit it doesn't spoil, even after 1+ year.

Ingredients

1 lb white sugar
1 cup (1/2 lb) water

Directions

Place the sugar and water in a pan over medium-low heat. Stir until the sugar has dissolved completely. Remove from heat and allow to cool. Put in a clean jar and store in the refrigerator. Enjoy within 12 months.
